Caymus Special Select Cabernet Sauvignon 1994 98 pt. (tasted 12/24/10)
Happy New Year! This was wonderful wine. Very complex yet elegant, with a nose of black fruits, tobacco and herbs on a very long finish. Served with prime New York cut steaks, garlic spinach, baked potato and Cesar salad...the wine was the star of the meal. If you have this in you cellar you can drink now or hold.
Caymus Cabernet Sauvignon 2006 94 pt. (tasted 2/23/11)
Dark, ruby red/purple in color with a palate of cherries, raspberry, cocoa and tobacco. Dry and smooth with balanced tannins and a lovely, long finnish. This is ready to drink or you can hold. We had this while on vacation in the Dominican Republic with lamb chops and it was a wonderful paring. Went well with the Dominican cigars after dinner as well.
Caymus Cabernet Sauvignon 2008 92 pt. (tasted 3/12/11)
Upon opening, nose of earth, cassis, black fruits and vanilla on the palate. Full bodied with chocolate and cocoa on the finish. At 2 hours of decant, nuance of plum and licorice. This wine is a bit early to drink right now I would wait another year or two before opening and would expect it drink well through 2020.

Plums, clove, oak, balanced, agreeable, smooth, light earth and black fruit. Jammy and glycerin Not ready to drink yet lay down for a couple of years.
