HOMEMADE GRANOLA (Sweet Lorraine’s)

3/4 c. canola oil
1 c. brown sugar
1/2 c. honey
3 c. old fashioned oats (do not use quick oats)
3/4 c. sweetened, flaked coconut
3/4 c. walnut pieces
1 c. almond slices
1/2 t. ground cinnamon
1/2 t. ground nutmeg
pinch ground allspice
1 c. golden raisins
1/2 c. dried cranberries

Preheat oven to 350°. Combine canola oil, sugar and honey in a sauce pan. Heat over medium heat to the boil, reduce heat and simmer for 5-7 minutes til combined and set aside. Combine all nuts, spices and coconut with the oats. Pour butter-sugar mixture over oat mix and make sure oats are well coated. Place onto parchment-lined sheet pans, spread evenly, not more than 1/2 inch thick. Bake for 8-10 minutes or til well toasted. Stir the granola several times, so that it cooks evenly. Remove from oven and let cool. Place in large stainless steel bowl and stir in raisins and cranberries. store in plastic bowls
