CHEESE-STUFFED MEATLOAF (Robin’s)

1 1/4 lb. ground beef
1 egg
1/2 c. Panko crumbs
1 jar pasta sauce, divided
2 c. shredded Mozzarella cheese, divided
1/4 c. diced onion
2 t. olive oil
1 T. parsley (optional)
Parmesan cheese

Sauté onion in  olive oil and set aside to cool. In a large bowl combine ground beef, 1/3 c. pasta sauce, egg, Panko crumbs and onion. Line a (9x13 inch) casserole dish with plastic wrap. Shape the beef mixture into a rectangle covering the bottom of the dish. Cover with 1 1/2 c. Mozzarella cheese and sprinkle with Parmesan cheese and parsley (if desired). Leave a 3/4 inch border around the edges. Roll, starting at long end, jelly roll style (use your plastic wrap to help you roll). Remove plastic as you roll it up. Press both ends together and seal edge. Bake 350°, uncovered, for 45 minutes. Remove from oven and drain off as much grease as you can. Pour remaining pasta sauce over meatloaf and sprinkle with the rest of the cheese. Bake an additional 15 minutes til sauce is hot and cheese is melted.
