CARIBBEAN JERK PORK ROAST

3 lb. lean, boneless pork loin
1 T. onion flakes
1 T. onion powder
2 t. thyme
2 t. salt
1 t. ground allspice
1/2 t. ground nutmeg
1/2 t. ground cinnamon
2 t. sugar or Splenda
1 t. black pepper
1 t. cayenne pepper or 1/4 t. ground habanera pepper

Pat the roast dry with paper toweling. Blend the remeining Jerk rub seasonings and rub evenly over the pork roast. Place the pork in a shallow roasting pan and roast at 350° for 45-60 minutes til internal temperature registers 155º. Remove from oven and let rest 10 minutes. Slice and serve. Wrap any leftovers well and refrigerate for tomorrow's sandwiches!
