1 head cauliflower, cut into (1/2-1 inch) florets
1/2 c. fresh bread crumbs
1/4 c. freshly grated Parmesan (or more)
1/4 c. olive oil
salt and pepper to taste
Preheat oven to 400º. Toss florets with olive oil, bread crumbs and cheese. Spread in a single layer on a jelly roll sheet lined with non-stick foil. Season with salt and pepper. (if you use a lot of cheese you often don't need the salt) Roast 30-40 minutes til nicely browned.
