CHOCOLATE GANACHE PIE (Gloria’s)
1 (8 inch) baked pie shell
8 oz. chocolate chips
1/2-2/3 c. heavy cream
2 t. sugar
2 T. black coffee
1 t. vanilla
1 small container of whipping cream
Put cream and chocolate in a microwave-safe container and cook, in 10 second increments, stirring, with a wooden spoon, repeating til chocolate is melted and smooth. Mix in sugar, coffee and vanilla. Set aside. Whip 1 container of whipping cream and add sugar to taste. Cool. Fold in to first mixture and pour into the pie shell. Refrigerate to chill. Top with whipped cream if desired.
