1 pkg. (16 oz.) uncooked rotini pasta
1 lb. ground Italian sausage
1 jar (24 oz.) pasta sauce
16 oz. cottage cheese
1 can (2 1/4 oz.) sliced black olives, drained (optional)
1 can (4 oz.) mushrooms, drained
12 oz. shredded Mozzarella cheese
2 pkg. (3 oz. ea.) sliced pepperoni
Preheat oven to 350°. Lightly grease a (9x13 inch) casserole dish. Bring a large pot of lightly salted water to the boil. Place pasta in the pot and cook for 8-10 minutes til al dente; drain. In a skillet, over medium heat, cook the sausage til evenly browned and drain the grease. Mix in the cooked pasta and pasta sauce. Pour into the prepared casserole dish. In a bowl, mix the cottage cheese, olives, mushrooms and Mozzarella cheese together. Spoon the cheese mixture over the sausage and pasta mixture. Top with pepperoni slices. Bake the pizza casserole for 25 minutes til bubbly and lightly browned.
