IMPOSSIBLE PUMPKIN PIE (Lucy’s)

1 c. pumpkin
1 c. evaporated milk
1/2 c. original Bisquick
1/2 c. sugar
1 T. butter, softened
1 1/2 t. pumpkin pie spice
1 t. vanilla
2 eggs

Preheat oven 350°. Grease a (9x1x1 1/4 inch) pie plate. Mix all the pie ingredients and pour into the plate. Bake 35-40 minutes or til a knife inserted into the center comes out clean. Cool completely (about 1 hour). Cut the pumpkin pie into slices. Top with:

IMPOSSIBLE PUMPKIN PIE TOPPING:

1 1/2 c. thawed Cool Whip
1/4 t. pumpkin pie spice

Stir til smooth. Refrigerate til ready to serve.
