12 vanilla wafers
2 pkg.(8 oz. ea.) cream cheese softened
2 T. lemon juice
2/3 c. sugar
1 can (21 oz.) cherry or other flavored pie filling
Preheat oven to 350°. Line a muffin tin with baking cups and put a vanilla wafer in each. In a medium mixing bowl, beat cream cheese til fluffy. Add eggs, lemon juice and sugar and beat til thoroughly combined. Fill tins 3/4 full and bake 15-17 minutes. Cool on a rack. Top each with the pie filling. Store in the refrigerator.
