LEMON GINGER ALE CAKE WITH LEMON CREAM CHEESE GLAZE (Lucy’s)

1 box (18 1/4 oz.) white cake mix
1 box (3 oz.) instant lemon pudding mix
1 c. oil
3 eggs, beaten
1 c. Vernor’s ginger ale
1 t. lemon zest

Mix all of the lemon ginger ale cake ingredients together and pour into a greased angel food or Bundt cake pan. Bake at 350° for 50-60 minutes. Cool the lemon cake in the pan for 10 minutes. Transfer to a wire rack to cool the cake completely.

LEMON CREAM CHEESE GLAZE:

1 1/2 c. confectioners sugar
1 t. vanilla
1 T. butter, softened
4 oz. cream cheese, softened
1 t. lemon zest
3 T. lemon juice

Mix all of the lemon cream cheese glaze ingredients together and pour the glaze over the lemon ginger ale cake.
