SWISS CHARD AND BLACK EYED PEAS (Nancy’s)

1 bunch Swiss chard, washed, cleaned and chopped
1 onion, chopped
2-3 cloves garlic, chopped
1 c. chicken broth
salt and pepper to taste
2 T. lemon juice
1 1/2 c. frozen black eyed peas

Sauté onion and garlic in butter or olive oil. Add chard. Add broth and bring to the boil. Add black eyed peas and simmer til thickened (about 15-20 minutes). Adjust flavorings with salt, pepper and lemon juice. Serve over rice or noodles and garnish with parsley or cilantro.
