CORN BREAD (Donna’s)

1 1/2 c. yellow cornmeal
1/2 c. flour
4 t. baking powder
1/2 t. salt
1 c. milk
1 egg, beaten
1/4 c. sugar
1/4 c. corn oil

Preheat oven 425°. Place an (8-9 inch) cast iron pan in the oven for 2-3 minutes. Put oil in the bottom of the pan and roll around the pan to completely cover in oil. Mix dry ingredients together. Mix egg and milk and add to dry mixture, stirring enough to just blend. Pour into hot pan. Place on top rung in the oven and bake 20-25 minutes or til golden brown and crusty.
