GERMAN MUSTARD POTATOES (Elaine’s)
4-6 peeled and sliced potatoes
1/2 lb. bacon
4 eggs, hard boiled and sliced
1 medium onion, chopped
1/4 c. vinegar
1/4 c. mustard
Boil potatoes til soft and drain. While potatoes are boiling, in a fry pan, cook bacon and onion together til tender and drain the excess fat. Add eggs and mix with bacon mixture. In a measuring cup, mix together the vinegar and mustard, pour onto bacon mixture and mix thoroughly. In a bowl, add potatoes and bacon mixture. Mix well and serve.
