SWEET POTATO PANCAKE (Peggy’s)
1 1/2 c. sifted all purpose flour
3 1/2 t. baking powder
1 t. salt
1/2 t. nutmeg
1 1/4 c. cooked, mashed, sweet potatoes
2 eggs, beaten
1 1/2 c. milk
1/4 c. butter, melted
Sift the dry ingredients into a bowl. Combine the remaining ingredients and add to flour. Mix til just blended. Drop by tablespoonsful onto a hot, greased griddle and fry on both sides til browned.
