1 c. unsalted butter, softened
1 1/2 c. sugar
1 egg
1 1/2 t. clear vanilla extract
1/2 t. clear almond extract
2 3/4 c. all purpose flour
2 t. baking powder
1 t. salt

Preheat oven 400°. In a mixing bowl, cream butter and sugar til light and fluffy. Beat in egg and extracts. Mix flour, baking powder and salt. Add to butter mixture, 1 cup at a time, mixing thoroughly after each addition (do not chill the dough). Divide into 2 balls, and on a floured surface, roll each ball into a 12 inch circle (1/8 inch thick). Dip your favorite cookie cutters into flour before cutting into desired shapes. Bake on an ungreased sheet for 6-7 minutes or til lightly browned. Cool sugar cookies on racks and store in cookie jar. These make great Christmas cookies.
