MANDARIN ORANGE CAKE (Ann’s)
1 box Duncan Hines butter cake mix
1/2 c. oil
1 can (11 oz.) Mandarin orange slices, undrained
1 ctn. (8 oz.) Cool Whip
1 can crushed pineapple, undrained
1 pkg. instant vanilla pudding mix
Mix together the Duncan Hines Butter cake mix, oil, eggs and Mandarin orange slices and beat well with an electric mixer, on medium speed, for 3 minutes. Pour into 2 (8 or 9 inch) greased or sprayed pans and bake per package directions. Cool and slice each layer in 2 horizontally. Layer the cake with a mixture of Cool Whip, crushed pineapple and instant vanilla pudding. Top with chocolate shavings. Store the mandarin orange cake in refrigerator.
