1/2 c. sugar
1 T. corn starch
1/4 t. ground cinnamon
4 c. sliced peaches (about 6 medium)
1 t. lemon juice
3 T. shortening
1 c. all purpose flour
1 T. sugar
1 1/2 t. baking powder
1/2 t. salt
1/2 c. milk

Preheat the oven to 400°. Mix 1/2 c. sugar, corn starch and cinnamon in a (2 quart) sauce pan. Stir in peaches and lemon juice. Cook, stirring constantly, til the mixture thickens and boils. Boil and stir 1 minute. Pour into an ungreased (2 quart) casserole dish. Keep peach mixture hot in the oven. Cut the shortening into the flour, 1 T. sugar, baking powder and salt til the mixture resembles fine crumbs. Stir in the milk. Drop the dough by 6 tablespoonsful onto the hot peach mixture. Bake til golden brown (24-30 minutes). Serve warm with cinnamon-whipped cream.
