We had a neighbor call and request the recipe for the wonderful mini cheesecakes that Robin was reminiscing about during a previous conversation. Robin e-mailed this mini-cheesecake dessert appetizer recipe to us:

Heard the request for the Miniature Cheesecakes. The recipe comes from a woman named Nancy. When I went to Michigan State, I was a nanny for her two wonderful kids. Nancy loved to entertain, and would often make these for her guests. She’d always save a few to send home with me. I’d have to eat them in the car, or my roommates would devour them! - Robin

1 small box (12 oz.) vanilla wafers
2 pkg. (8 oz. ea.) cream cheese
3/4 c. sugar
2 eggs
1 T. vanilla
cherry or blueberry pie filling (or your favorite)

Preheat oven to 350°. Crush vanilla wafers. Place 1 t. wafers into miniature paper liners which have been fitted into mini-muffin pans. Cream together with mixer, the cheese, sugar, eggs and vanilla. Fill each liner with mixture almost to top. Bake for 15 minutes. Cool the cheesecakes and top each with a dab of filling.
