KEY LIME CAKE (Mary Ann’s)

1 1/3 c. sugar
2 c. all purpose flour
2/3 t. salt
1 t. baking powder
1/2 t. baking soda
1 pkg. (3 oz.) lime flavored Jello gelatin
5 eggs
1 1/3 c. cooking oil
1 t. vanilla
3/4 c. orange juice
1 t. lemon extract
1/3 c. fresh key lime juice (about 3 limes)
1/3 c. powdered sugar
whipped cream and lime slices for garnish

Preheat oven to 350°. Place dry ingredients into a mixing bowl. Add eggs, oil, orange juice, vanilla and lemon extract and beat til well blended. Pour batter into a (9x13x2 inch) greased pan and bake 30-35 minutes. Remove from oven and let stand in pan til almost cool (about 15 minutes). Pierce all over the top with a fork. Drizzle thoroughly with lime juice mixed with powdered sugar. Cover and refrigerate. To serve: cut into squares, top with whipped cream and garnish with lime slices.
