APPLE CAKE (Jeanette’s)
In a large bowl, mix 1 3/4 c. sugar, 3 eggs, 1 c. oil, 1 t. baking soda, 1 t cinnamon, 2 c. all purpose flour, 1 c. chopped walnuts or pecans and 5-7 medium apples (any variety) peeled, cored and chopped. Pour into a greased (9x13 or 8x12 inch) metal pan. Bake 350° for 45 minutes to 1 hour. Sprinkle with powdered sugar if desired.
