In a large pot that will fit in the oven, add 2 1/2 c. lukewarm water, 2 scant t. salt, 2 1/2 T. dry yeast, 1 t. sugar, 1 T. softened butter , 3 c. white flour and 1 c. whole wheat flour. Mix together, rub top with olive oil, cover and let rise til doubled in size. Bake 375° for 25 minutes or til golden. Remove from oven, cool, loosen from sides with a knife and cool completely.
