We had quite a conversation regarding the white, yellow and orange sweet potato last month (we had never heard of the white one!). Many of our listeners are going to try the sweeter "white sweet potato" for their holiday recipes this year. Lucy gave us this pie recipe she's been using as her Thanksgiving "go to dessert" for some time now and many of our neighbors called back to say how great this sweet potato pie recipe was.

SWEET POTATO PIE (Lucy Taylor’s)

2 medium sweet potatoes (white, yellow or orange)
1/4 c. soft butter
1/2 c. brown sugar
1/2 c. sugar
1/4 c. evaporated milk
2 eggs, beaten
pinch of salt
1 t. vanilla
1 t. nutmeg
1/2 t. ginger
1/4 t. clove
1 t. cinnamon
2 T. flour

Boil whole potatoes til tender. Cool, peel and mash or push through a sieve. Add remaining ingredients and mix well. Pour into a (9 inch) Pillsbury pie crust that has been crimped. Bake 325°-350° for about 1 hour or til a knife inserted into the center comes out clean.
