CRANBERRY TURKEY BURGERS (Sally Sibthorpe, 2006, 1st Place Blue Ribbon, Healthy Cooking, Mi. State Fair)

1 lb. ground turkey
1/3 c. minced onion
1/3 c. minced celery
1 t. salt
1/4 t. ground pepper
1 T. paprika
1 t. dry mustard
1 T. poultry seasoning
4 T. chopped parsley
1 c. shredded low fat cheese
1/2 c. dried cranberries
2 T. Dijon mustard
2 T. mayonnaise
4 T. cranberry chutney
4 leaves lettuce
4 bakery rolls

Preheat grill. In a bowl, mix the turkey, onion, celery, salt, pepper, paprika, dry mustard, poultry seasoning, parsley, cheese and cranberries. Form mixture into 4 patties. Place turkey burgers on the grill and cook 5-10 minutes or til well done. Split the rolls. Mix Dijon mustard and mayonnaise together and spread on both sides of the roll. Add 1 T. Cranberry chutney. Top the bottom with a lettuce leaf. Add turkey burger and top on roll. Slice in half if desired. Serve with corn relish if desired.
