Cornbread salad is one of my favorite salads. I usually get mine from the deli at the Holiday Market in Royal Oak, but with this delicious cornbread salad recipe from Millie...I may start making my own! - Bob.
CORNBREAD SALAD (Millie's)
1 (10 inch) pan cornbread, crumbled
2 c. pinto beans drained
1 c. chopped onion
2 c. mayonnaise
1 c. sweet pickles, diced
1 c. chopped bell pepper
2 c. diced tomatoesMix cornbread, beans and onions. Mix remaining ingredients together and pour over top. Top with 1 c. grated Cheddar cheese and bacon bits.
Note: we were told that leftover cornbread can be used in this recipe also.
