Karen gave us this recipe and said it is a very colorful bean dip that is great for parties. This bean dip recipe is different because it uses black beans, black eyed peas and has a cider vinegar based sauce. You may want to take this party bean dip to the next party, tailgate or pot luck you go to as Karen say's her friends always ask her to bring her bean dip.
BEAN DIP (Karen Winters)
1 can (14.5 oz.) black beans drained and rinsed
1 can black eyed peas, drained and rinsed
1 can corn drained and rinsed
3 stalks celery, finely chopped
half red onion, finely chopped
1/2 jar jalapeno peppers, finely chopped
BEAN DIP SAUCE:
1 c. Crisco vegetable oil
1 c. sugar
1/2 c. apple cider vinegar
Simmer sauce ingredients for the bean dip for 20 minutes and pour over bean mixture, mix together and refrigerate dip for 3 hours to overnight. Serve bean dip with Frito’s scoops. This makes a lot, so strain off what you need and you can refrigerate the bean dip for weeks.
