CUCUMBER SALAD
3 large cucumbers, peeled and thinly sliced
1/2 head of lettuce, shredded
4 T. olive oil
1 1/4 c. red wine vinegar
1 t. Dijon mustard
1 T. honey
1/2 t. fresh dill, chopped
1/2 t. celery salt
pinch black pepper or to taste
Toss all the cucumber salad ingredients thoroughly in a large salad bowl. Chill the salad for 2 hours before serving.
