I've known Tim Castaneda for over 25 years. He started in the restaurant business working at his parents restaurants and now owns Zumba's Mexican Grill. I love to top my egg dishes I make for brunch and my hamburgers with this lovely sauce and or topping. PICO DE GALLO (From Zumba Mexican Grill in Royal Oak, Mi.)

3 c. diced tomatoes
1/2 c. diced onion
1/2 c. diced jalapeno peppers, seeded if desired
1 1/2 oz. lemon or lime juice
2 T. finely chopped cilantro
1 T. kosher salt
1/4 t. fresh or granulated garlic             

Combine all ingredients and mix well. Let sit for at least 10 minutes and serve.
