SAG ALOO (Potato and Spinach recipe)

7-9 medium sized potatoes of your choice, cut into quarters
4 garlic cloves, chopped
1 t. turmeric
1 t. cumin
1/2 t. salt
1/2 t. chili powder
1/2 t. mustard seeds
fresh spinach to taste
water for boiling
vegetable oil for frying

Boil the potatoes til they are just cooked through but not soft (10-15 minutes). Heat the oil in a pan over medium heat and add the garlic and spices. Drain the potatoes once they are ready and put them in the pan as soon as the garlic begins to turn a light brown. Add the spinach after the potatoes are browned. Cook til the spinach has wilted, remove from heat and serve the sag aloo immediately.
