Here is Gloria Pitzer's recipe for funnel cakes, those wonderful coiled cakes you get as a dessert at the state fair...can now be made at home!
FUNNEL CAKES (Gloria Pitzer)
In a medium bowl, using an electric mixer on medium-high, beat together 1 1/2 c. club soda and 1 1/2 c. boxed pancake mix with 1/4 c. sugar until batter is consistency of buttermilk. Heat 3 inches of oil to 385° in a heavy 2 1/2 quart saucepan. Using a funnel, sprayed inside with Pam or wiped in oil, hold it over the hot oil pouring 1/4 c. batter through funnel into the oil. Move the funnel so that the batter makes coils. Brown both sides of the coil til crispy (about 3-4 minutes). Remove with tip of a sharp knife and let drain on paper towel. Dust immediately in powdered sugar.
