I know, it says it's a pistachio salad, but it's really a fluff dessert. A little pineapple, some instant pistachio pudding, mini marshmallows and walnuts topped off with whipped cream...humm...salad, dessert, salad, dessert...it's a moral dilemma. I mean if you're cutting desserts out of your diet, well then, here's a great salad recipe for you. If they told you you need to consume more nuts...there's your pistachios and walnuts, more fruits...ok, pineapple qualifies. But I have to admit, I can't help you out with the marshmallows and Cool Whip, that my friends still remains firmly in the dessert category! Either way give a try to Millie's wonderful pistachio fluff salad...whatever you want to call it. - Rob.
PISTACHIO FLUFF SALAD (Millie’s)
1 can (22 oz.) crushed pineapple, undrained
1 small box instant pistachio pudding mix
1 small box miniature marshmallows
1/2 c. English walnuts, broken into pieces
9 oz. Cool Whip
Combine the pineapple and pudding mix. Add marshmallows and walnuts. Fold in Cool Whip. Refrigerate til ready to serve. Stir to fluff up before serving.
