This recipe for Easter Egg Bread won't be published til our April issue comes out and that will be to late for Easter. I'm going to share the Easter recipe with you now here at our web site. This bread will look great on your Easter dinner table. Rob Allison.
EASTER EGG BREAD (Pat’s)
1 T. Crisco shortening
3 pkg. active dry yeast
3/4 c. sugar
1 1/2 t. salt
8-9 c. sifted flour, divided
2 1/2 c. milk
3/4 c. butter or margarine
Grease a large bowl with shortening and set aside. In a second large bowl, stir together yeast, sugar, salt and 2 c. flour. In a (2 quart) saucepan, over low heat, heat milk and butter til warm (aprox. 120°). Using a mixer on low speed, gradually beat milk mixture into the yeast mixture til well blended. Increase speed to medium and beat 2 minutes. Add eggs and 1 1/2 c. flour. Increase speed to high and beat 2 more minutes. Stir in enough additional flour to make a soft dough (use a wooden spoon). Place on a lightly floured surface and knead for 5 minutes til smooth and elastic. Place in the greased bowl and turn once. Cover with a towel and let rise in a warm place for 1 hour or til doubled in size. Punch down once, cover and let rest for 10 minutes.
Meanwhile, while the bread is rising:
2 T. shortening
12 eggs died your favorite colors
2 egg yolks
2 T. milk
Grease 2 large baking sheets with shortening. Divide dough into quarters. On a large, floured surface, roll out each quarter into 36 inch ropes (you are going to braid the bread now). Put 2 ropes side-by-side on each sheet and loosely twist together, leaving 6 spaces to fit the eggs into. Form into a circle pinching the rope ends together. Press 6 eggs, evenly spaced, into the dough. Repeat with remaining dough and eggs. Cover and let double in size (about 1 hour). In a small bowl, make an egg wash with the egg yolks and milk. Brush the dough, but not the eggs. Preheat oven 375°. Bake bread for 20 minutes til golden brown and it sounds “hollow” when you tap it. Remove from oven and cool on a wire rack.
