TACO SOUP (Dennis)
1 lb. ground beef or turkey
1 chopped onion
2 cloves minced garlic
1 can (15 oz.) tomato sauce
1 can (15 oz.) kidney beans, undrained
1 can (15 oz.) waxed beans, undrained
1 can (15 oz.) corn, undrained
2 qt. tomatoes (Dennis uses his own canned tomatoes)
1/2-1 pkg. dry taco seasoning
Saute ground beef and onion til browned. Add garlic and cook about 1 minute. Drain fat. Mix in remaining ingredients and simmer, covered, 3 hours. Dennis cooks the soup in his slow cooker for 3 hours on high. Serve with taco chips and shredded cheese. Soup freezes well.
