2 c. medium grind bulgur wheat
2 T. olive oil
2 T. butter
6 stalks green onions, chopped
4 c. chicken broth
salt and pepper to taste
1/2 t. oregano

Lightly brown the bulgur in a deep frying pan with the oil and butter. Add green onions and cook briefly. Add broth and season with salt, pepper and oregano. Simmer, uncovered, about 20 minutes or til liquid is absorbed. You may add sautéed mushrooms cooked in garlic butter.
(serves 6-8 as a side dish)
