SPINACH SIDE DISH

1 pkg. frozen spinach thawed and well drained. Sprinkle with 1/2 t. nutmeg. Stir in 1/3 c. golden raisins (you can substitute dried cherries, blueberries or cranberries). Dot with butter. Cook on high in a microwave oven to serving temperature. Add 1/3 c. toasted pine nuts before serving.

TOASTED PINE NUTS:
Preheat a dry skillet and add pine nuts. Cook, stirring or shaking,  for 10-45 seconds, just enough to get some color, don't let them smoke. Be very careful as they will go from toasted to burnt in just a couple of seconds.
