PRIDE O' PUMPKIN CAKE (from the 1st Ask Your Neighbor recipe booklet, Early 60's)

2 1/4 c. sifted flour
1/2 t. salt
1 1/2 t. cinnamon
1/2 t. allspice
1 c. brown sugar
1 egg and 2 egg yolks, unbeaten
3/4 c. buttermilk or sour milk
3/4 c. canned pumpkin
3 t. baking powder
1/4 t. soda
1/2 t. ginger
1/2 c. butter
1/2 c. white sugar
1/2 c. chopped walnuts

Measure sifted flour, add baking powder, salt, soda and spices. Sift together three times. Cream butter, add sugars gradually and cream well. Add egg and egg yolks, one at a time, heating til light. Add flour alternately with buttermilk, in small amounts, beating after each addition, til smooth. Add pumpkin and nuts. Mix well. Bake in two round (8 inch) layer pans, lined on bottom with paper, at 350° for 30-35 minutes or til done.
