I've known Tim for over 20 years. He started in the restaurant business working at his parents restaurants and now owns Zumba's Mexican Grill. GUACAMOLE (from Tim Castaneda owner of Zumba's Mexican Grille in Royal Oak, Mi.)

6 avocados
1 1/2 oz. pico de gallo
lemon juice to taste
1/8 c. fresh cilantro, chopped
1/4 t. garlic, minced
1/4 t. kosher salt

Remove the stems, cut, pit and scoop the avocados. Discard the stems and skins. Mash the pulp of the avocados. Add remaining ingredients. Taste and adjust seasonings with salt and pepper if necessary. Refrigerate.
