CHICKEN WITH LEMON AND GARLIC SAUCE

Preheat oven 350°. Put a (2 1/2-3 lb.) cut-up fryer in a (9x13 inch) glass pan. Squeeze 8-12 lemons to get 1 1/2-2 c. juice. Combine lemon juice, 1/4 c chopped fresh parsley, "several" T. olive oil, and "several" T. water, salt and pepper to taste. (enough water and oil to cover chicken). Pour 1/2 the sauce over the chicken. Add 1 head garlic (separated and peeled). Bake 30 minutes at 350°. Turn chicken and add the rest of sauce. Bake about 20 minutes more til chicken is done (165°-175° internal temperature).
