HUEVOS RANCHEROS (Rob Allison's)
A great scrambled egg recipe for brunch!
1 pkg. corn tortillas
1 pkg. Tennessee brand, hickory smoked, pepper bacon, cooked, fat reserved
10-12 eggs, scrambled
1 lb. chili, heated through (I like chili with beans)
shredded Romaine lettuce
chopped Roma tomatoes
chopped jalapeno peppers
Fry tortillas in the reserved bacon fat til browned and crisp then drain on a paper towel. Lay a tortilla on a plate and top with scrambled eggs, chili, salsa, shredded Romaine lettuce, chopped Roma tomatoes, chopped jalapeno peppers and a large dollop of fresh sour cream. Serve bacon on the side.
Note: if you'd like more crunch, place a tortilla between each layer. But you may need 2 pkg. - Rob.
