Here's another old friend of the "neighbors". Joy Taylor-Skiba who for many years followed our program with "Joy's Home Show" at WEXL. She called us last month to answer a neighbor's question about this famous middle-eastern dish. One of these days we may lure her out of retirement and back on the air with us!
Bob & Rob.
KAFTA (Joy Taylor-Skiba)
2 lb. finely ground lamb (you can use half lamb and half beef or up to 70% beef)
1 medium onion, minced
3/4 bunch parsley, finely chopped, drained
1 t. salt or to taste
1/2 t. freshly ground pepper
1 t. Syrian spice mix (find at Middle-Eastern stores)
Mix all ingredients together very well til almost dough-like. Roll into hotdog shapes. Grill to about medium, turning once (they may be broiled).
