APPLE BARS (Helen's)

Mix 2 c. peeled and coarsely chopped apples and 2 T. lemon juice; set aside. In a bowl, put 2 c. flour, 2 c. light brown sugar packed and 1 stick softened butter. Mix by hand and add 1 c. chopped walnuts, pecans or coconut. Pack 2 3/4 c. of the mixture into the bottom of a greased and floured (9x13 inch) glass baking dish; set aside. To the remaining ingredients, add 1 1/2 t. cinnamon, 1 t. baking soda, 1/2 t. salt, 1 t. vanilla, 1 c. sour cream and 1 egg. Mix together and add the chopped apples, spread over crust and add to the pan. Bake 350° for 30-35 minutes. Cool, cut into 24 bars and sprinkle with confectioners sugar.
