BAKED BUFFALO WINGS (Rob Allison's)

Preheat oven to 425°. Line a roasting pan or baking sheet with aluminum foil. Arrange 8-12 chicken wings in the pan and lightly spray with Garlic Mist cooking and seasoning spray (available at G.F.S. stores) or garlic-flavored non-stick-spray. Sprinkle chicken wings with kosher salt, fresh cracked pepper and roasted garlic powder (available at Rafal Spice Co.). Bake for 30 minutes, turn wings over and bake 30 minutes longer. Remove from oven and transfer to a very large glass or metal bowl. Toss with a liberal amount of Frank's Buffalo Wing sauce (1/2-3/4 cup) til wings are well coated. Return to oven for 5 minutes. Remove from oven and place on a serving platter. Garnish the hot wings with a sprinkle of Italian herbs. Finely chop the green part of a green onion (it will look like chopped chives) and sprinkle over the wings. Serve with celery stalks and blue cheese dressing.

Note: Rafal Spice Co. also sells Ancho chili powder that adds even more "zip" to this recipe. They are located at 2521 Russell St., Detroit, Mi. in Eastern Market. Call (313) 259-6373 or visit www.rafalspicecompany.com to order. Pick the best chicken in town while you're down there at Capital Chicken Factory located at: 1466 East Fisher Freeway in Eastern Market. Call (313) 567-8200. These buffalo wings make great appetizers for your Super Bowl party, picnics, or just a great "lower fat" plate of spicy food on a cold winter night. You can chill them too.
