PUMPKIN COOKIES (Sue's)
Combine 2 c. sugar, 1 1/2 c. Crisco shortening, 1 1/2 c. pumpkin and 3 eggs; mix well. Add 4 c. flour, 1 t. salt, 2 t. cinnamon, 2 t. baking soda, 1 1/4 t. baking powder, 1/2 c. chopped nuts, 1 c. chocolate chips and/or 1 c. plumped raisins. Drop cookies by tablespoonsful, 2 inches apart, onto a cookie sheet and bake cookies at 350° for 12-15 minutes til very lightly browned. Cool pumpkin cookies.
(makes about 5-6 dozen)
CARAMEL FROSTING FOR PUMPKIN COOKIES:
3 T. butter
4 T. milk
1/2 c. light brown sugar, packed
1 c. confectioners sugar
1/2 t. vanilla
Mix and bring to boil, butter, milk and brown sugar. Boil 2 minutes. Cool. Add confectioners sugar and vanilla. Frost the pumpkin cookies.
