CHESS PIE (Bradley's Jazz Club In New York)
Cream together 1/2 c. butter and 2 c. sugar. Sprinkle in 4 T. yellow cornmeal, 3 beaten eggs, 2 t. flour, 1 c. buttermilk, 2 t. vanilla and 2 t. vinegar. Combine on low speed of mixer. Fold in 1/4 c. chopped pecans and 10 oz. crushed pineapple, very well drained. Add 1/2 oz. of Grand Marnier or Cointreau. Pour into an unbaked (9 inch) pie shell. Bake 350° for 45 minutes.
