1 large cucumber
1 T. olive oil
2 t. white vinegar
2 cloves garlic, crushed
1 c. plain yogurt
1 T. dill weed
1/2 t. salt

Peel cucumber, slice lengthwise and scoop out seeds. Coarsely grate and squeeze out excess liquid. Combine remaining ingredients and stir in cucumber.
