PEANUT BUTTER COOKIES (Sweet Lorraine's)
1/2 c. unsalted butter, softened
1/2 c. sugar
1/2 c. brown sugar
1 c. creamy peanut butter
1/2 t. pure vanilla
1 1/4 c. unbleached flour
1/2 t. baking soda
1 c. peanut butter chips
Cream butter and sugars til light and fluffy. Add peanut butter, egg and vanilla; mix well. Sift together flour, soda and salt. Mix into above ingredients. Fold in peanut butter chips. Drop by spoonsful on parchment lined cookie sheet. Bake 350° for 8-10 minutes.
