MACHUS RED FOX SALAD DRESSING
2 t. salt
2 t. black pepper (freshly ground)
1/2 c. cider vinegar
2/3 c. Heinz ketchup
2/3 c. chopped onion
2/3 c. sugar
Combine all ingredients in blender and blend at medium speed til onion is pureed. Reduce speed to low and drizzle 1 scant c. canola oil very very slowly til emulsified. Store in refrigerator for up to 1 month.
(yield 2 1/2 c.)
The Red Fox salad itself used mixed greens, crumbled Roquefort cheese, crumbled bacon bits, quartered tomatoes, crumbled hard cooked eggs and croutons.
