POKEY POT STEW (A Pokey Pot Is A Slow Cooker or Crock Pot)
2 lb. lean stewing beef, cut in 1 inch cubes
2 small onions, quartered
3 medium potatoes, quartered
3 medium carrots, cut in 1 inch lengths
1 c. celery, chopped
1 can (1 lb.) tomatoes
2 T. tapioca (or 3-4 T. flour), dissolved in a little warm water
1 T. sugar
1 T. salt, optional
1/4 t. pepper
1/4 c. red wine, optional
1 can (14.5 oz.) beef broth (or 2 c. water)
Place the stewing beef in the bottom of a slow cooker. Add onions, potatoes and carrots. Combine remaining ingredients in a mixing bowl and add to slow cooker. Cover Crock Pot and cook on low for 12-15 hours or 5-6 hours on high or 1 hour on high and 10 hours on low. If you want to make it a soup just add more liquid and omit the tapioca.
