GREEN TOMATO RELISH
4 lb. green tomatoes (about 8 cups), chopped
1/4 c. salt
1 t. black pepper
1 1/2 t. dry mustard
1 1/2 t. cinnamon
1/2 t. allspice
1 1/2 t. ground cloves
1/4 c. mustard seed
1 qt. cider vinegar
1 c. packed light brown sugar
2 sweet red or green peppers, chopped
1 onion the size of an apple, chopped
In large kettle mix all relish ingredient together. Cover and let stand overnight (24 hours). Then bring to boil and cook on low boil, stirring frequently to keep the relish from scorching or sticking to the bottom of the pan, for 15 minutes. Spoon into hot sterilized jars leaving 1/8-inch headspace. Seal. Process the green tomato relish in a boiling water bath for 10 minutes.
