PLUM COFFEE CAKE (Baking Powder Kuchen)
1 c. all-purpose flour
1 t. baking powder
1/4 t. salt
1/2 c. (2 sticks) butter or margarine, at room temperature
1/4 c. sugar, divided
2 large eggs
1/2 t. grated lemon zest
10 red or purple plums, halved and pitted
1 t. cinnamon, optional
1/2 c. chopped nuts, optional
Preheat the oven to 350°. Grease and flour an (8 inch) square baking pan. Set aside. In a large mixing bowl, whisk together the flour, baking powder and salt. Transfer to a piece of waxed paper. Cream the butter or margarine and 1/2 c. sugar together with an electric mixer on medium speed. Add the eggs, one at a time, beating well after each addition. Add the dry ingredients and lemon zest and mix well. Spread the mixture evenly into the prepared pan. Arrange the fruit over the top in rows (cut side down) and press lightly into the batter. Sprinkle the fruit with the remaining sugar, the cinnamon and nuts, if desired. Bake 30-35 minutes or until set and lightly brown. Serve warm, cut into squares.
