STRAWBERRY GLAZE SHORT PIE (A Nice Change From Shortcake!)
SHORT PIE CRUST:
1 c. Bisquick
1/4 c. soft butter (1/2 stick)
3 T. boiling water
Put Bisquick and butter into a (9 inch) pie pan. Add boiling water and stir vigorously with a fork til dough forms a ball and "cleans" the pan (dough will be puffy and soft). With fingers and heel of hand, pack evenly into the bottom and up the sides of the pan (it looks thin but gets thicker after baking). Flute the edges if desired. Bake 450° for 8-10 minutes. Cool.
1 qt. strawberries washed, drained and hulled
Simmer 1 c. of the strawberries, sliced, with 2/3 c. water til berries start to break up (about 3 minutes). Blend 1 c. sugar, 3 T. cornstarch and 1/3 c. water and stir into boiling mixture. Boil 1 minute, stirring constantly. Cool.
Pour remaining berries into crust and cover with glaze. Refrigerate at least 2 hours. Top with whipped cream, ice cream or Cool Whip.
